300ml Vitasoy Protein Enriched Ricemilk

2 1/2 cups (320g) gluten free self-raising flour

2 tsp gluten free baking powder

1/2 cup (110g) caster sugar

2 tsp lemon juice

1 tsp vanilla essence

2 large eggs

50g dairy free reduced fat spread, melted, cooled

1 large green apple, grated (remove excess juice)

Cinnamon, to dust
Step 1
Sift the flour and baking powder into a bowl. Add the caster sugar. Stir well.
Step 2
Whisk together the Vitasoy Protein Enriched Ricemilk , lemon juice, vanilla, eggs and 1 tbsp of spread.
Step 3
Combine the ricemilk mixture, flour and apples until smooth. Stand for 5 minutes.
Step 4
Heat a frying pan on low. Lightly grease with the remaining spread. Pour 1/3 cup of batter and cook pikelets until lightly golden. Turn over and cover with a tight fitting lid.
Step 5
Cook for a further 2 minutes and remove. Repeat with remaining batter.
Serve sprinkled with cinnamon and drizzle with maple syrup.
