1 litre Vitasoy Chocolate soymilk

250ml (1 cup) water

125g (1/2 cup) caster sugar

1 tbsp dark cocoa

2 tbsp hot water

3 tsp vanilla extract

2 large egg yolks, lightly beaten
Step 1
Place water and sugar into a saucepan, cook on low heat until sugar dissolves, then cool.
Step 2
Combine the cocoa and hot water to a smooth paste. Whisk together the Vitasoy Chocolate Soymilk and the cocoa paste until smooth. Place in a non-stick saucepan with sugar syrup, vanilla extract and eggs. Mix until smooth.
Step 3
Cook on low heat, stirring constantly, until mixture thickens. Don't boil or over heat.
Step 4
Pour into container and freeze for 2 hours. Break up any lumps or place in food processor and pulse.
Step 5
Return to freezer and allow to just freeze again. Repeat this process 3 times.
Step 6
Stand for 3 minutes before serving.
Serve with fresh berries or cherries, if desired.
