300ml Vitasoy Protein Enriched Ricemilk

1 tbsp olive oil

2 medium onions, diced

3 sticks celery, finely sliced

½ tsp curry powder

250g frozen peas

½ medium Iceberg lettuce, shredded

Freshly ground salt and black pepper, to taste
Step 1
Heat the oil in a medium sized, heavy based saucepan. Cook the onion, celery and curry powder for 8 minutes over low heat. Cover and stir occasionally.
Step 2
Add the peas, lettuce and the Vitasoy Protein Enriched Ricemilk. Partially cover and simmer for 8 minutes or until tender.
Step 3
Puree in a blender and season well with the salt and pepper.
