1 litre Vitasoy Protein Enriched Ricemilk

1 tbsp olive oil

1 cup (200g) Arborio rice

¼ cup (60g) caster sugar

1 fresh vanilla bean, split lengthwise

OR 2 tsp vanilla extract

2 star anise

1 cinnamon stick
Step 1
Heat the oil in a medium or large sized heavy based saucepan, add the rice and cook stirring for 1 minute or until lightly toasted.
Step 2
Stir in the Vitasoy Protein Enriched Ricemilk, sugar, vanilla, star anise and cinnamon. Cook whilst stirring regularly for 25 - 30 minutes, partially covered.
Step 3
Cover and set aside for 5 minutes or until the rice is plump. Discard the vanilla bean, star anise and cinnamon stick before serving. Serve immediately. Delicious with stewed fruits or fresh berries.
